Citric acid is a weak organic tricarboxylic acid having the chemical formula C6H8O7. It occurs naturally in citrus fruits. In biochemistry, it is an intermediate in the citric acid cycle, which occurs in the metabolism of all aerobic organisms. A citrate is a derivative of citric acid; that is, the salts, esters, and the polyatomic anion found in solution. Citric acid exists in greater than trace amounts in a variety of fruits and vegetables, most notably citrus fruits. Citric acid exists in a variety of fruits and vegetables, but it is most concentrated in lemons and limes, where it can comprise as much as 8 percent of the dry weight of the fruit. Citric acid is a common food additive and is found in everything from sodas to candies.
Uses and Applications
Approximately 50% of the world’s citric acid production is used as a flavor enhancer in beverages. Citric acid is used in soft drinks, teas, juices, and other beverages to create a slightly tart, refreshing flavor and balance sweetness. Because citric acid can be made in a powder form, it can be used in dry foods when a sour flavor is desired. Citric acid is therefore a dry alternative to lemon juice or vinegar in dry foods such as seasoning salts, flavoring powders, and crunchy snacks. Many by-products and residues of the agro-industry can be used in the production of citric acid. A cost reduction in citric acid production can be achieved by using less expensive substrates.
The citric acid market is directly influenced by the growth of food additives in the processed food industry. Consumer interest in food & beverage products prepared from safe ingredients is projected to remain strong during the forecast years. On the basis of applications, citric acid market is segmented into food, beverages, pharmaceutical, personal care, metal cleaning and others. As an acidulant, citric acid competes with phosphoric, tartaric, DL-malic, fumaric, and lactic acids.
Global production has now reached 1.4 million tonnes and there is annual growth of 3.5–4.0 % in demand/consumption of citric acid. Any increase in citric acid productivity would be of potential interest and hence there is an obvious need to consider all possible ways in which this might be achieved. The global market for citric acid stood at USD 2.6 Billion in 2014, at USD 3.6 Billion by 2020 and is projected to grow at a CAGR of 5.5% from 2015 to 2020.
Citric acid is described as “nature’s acidulant”, occurring in a wide variety of plants, citrus fruits, animal tissues, micro-organisms and fluids, holding an important role in metabolism. Citric acid is in great demand as acidifying agent with great solubility nature that hardly could be substituted. It is widely used to impart tartness, pH adjustment, sourness, and also for enhancing flavors. Citric acid is widely used in food and beverage industry. Apart from this it also used in pharmaceutical products, personal care, cleaners & detergent and others. Moreover, citric acid is used for food safety and preservation, preparation of ready-to-made processed beverages and food products. In pharmaceutical industry citric acid is used as stabilizing & flavoring agent and in medical products such as soluble aspirin, antacid and also in dentifrices.
